DAY 52: A PHOTO OF FOOD YOU MADE

Just last week, I cooked my comfort food - Seafood Pasta. It’s a very fast and easy dish to make. 

Here’s a photo of the Seafood Pasta that I made

If you are fond of the Italian way of cooking, then I’m pretty sure that you will love it. You might be interested to try this recipe, so here it is… 

Ingredients:

Tomato (about 4-5 pieces and cut into cubes)

Chili Flakes (I usually put a generous amount of it as I love mine to be spicy)

Parsley 

Olive oil

garlic (5-7 cloves)

Squid (It’ll be more tasty if you’ll put about a kilo of it. Clean and cut the squid into rings)

shrimp (about 1/4 kg)

mussels (1/4 kg)

clams (1/2 to a kilo)

Spaghetti Pasta (Cook per package instruction)

Salt and pepper to taste 

 Procedure: 

  1. Heat the wok over medium heat. 
  2. Pour about 2 Tablespoons of Olive oil. Add garlic and wait until it turns brown. 
  3. Then, depending on your preference, add in the chili flakes. 
  4. Next, put the squid rings on the wok and let the water evaporate. 
  5. Add the remaining seafood ingredients as well as the tomatoes.
  6. Season with salt and pepper. 
  7. Once  the clams and mussels are thoroughly cooked, add a bit of olive oil and parsley before pouring the seafood mixture to the pasta. 
  8. Serve hot and share. :)

My Mom’s Cheesy Cake Recipe

My knowledge about cooking or baking was very limited until I came to Saudi Arabia and had the opportunity to be taught by my own mother. One of the many things that I learned from her and continuously practice by heart is how to bake a deliciously devilish cheesy cake.

It is my fervent hope that your peevish kids become good and sweet; droopy friends turn into vigorous and positive; and grumpy colleagues transform into affable and considerate after eating my mom’s version of CHEESY CAKE! :D

  

INGREDIENTS:

 2 egg yolk

1 big can condensed milk

1 cup flour

1 100 grams unsalted butter

1 teaspoon baking powder

1 cup grated cheddar cheese ( I normally put more and use Kraft brand if possible)

¼ teaspoon salt

1/8 cup sugar

Grated cheese for topping

 

 

PROCEDURE: 

  • Combine salt, flour and baking powder. Sift twice and set aside.
  • Cream butter and add sugar.
  • Then add the grated cheese, milk and egg yolks successively.
  • Put in the flour mixture and mix thoroughly.
  • Pour the cake mixture into a well-greased pan and top with grated cheese
  • Bake in a pre-heated oven for an hour or until it turns brown at 120O Celsius for big ovens and 150-175 for small ones.

BAKED MACARONI

I’m overly crazy about food! Talking about it as well as indulging myself in it really gives me that overwhelming joy. Oh yes, I am a certified foodie! :D

My recent craze these days is PASTA. Baked Macaroni, in particular, really makes me zappy no matter how tired I am. It’s like my drug! hahaha For this reason, I asked some of my acquaintances and associates if they could share their Baked Mac recipe to me. Unfortunately, I only got confused as their recipes vary! ‘Experiment and eventually come up with a recipe of your own,” a good advice from one of my buddies. I did put it into action and here’s what I came up with after a hundred attempts:

Ingredients:

(1) 500 grams elbow macaroni (cook per package instruction)

      750 grams ground beef

 (1) Medium red bell pepper – (cubed)

(4) Cloves of garlic (minced)

(2) Medium onions (minced)

(1) Medium Carrots (cubed)

(1) Can whole button mushrooms (cut into halves)

(4) Pieces Hotdogs (cut into bite size)

(1) 1000 grams Filipino or Sweet style spaghetti sauce

(1) Small can/pack Tomato Paste

      Sweet and Spicy Banana Ketchup

(1) 250grams Cheddar Cheese (grated)

(1) 250 grams Mozzarella Cheese

(1) Small can of CREAM

Oil

Salt and Pepper  

 

Procedure: 

  1. Heat the cooking pot over medium fire and then add oil.
  2. Sauté onion until it caramelized.  
  3. Add ground beef  and cook until it turns a bit brownish. Season with salt and pepper.
  4. Put in minced garlic and hotdogs. Sauté for about 3-4 minutes.
  5. Add red bell pepper, carrots, mushrooms and cook for 5 minutes.
  6. Pour in the Spaghetti sauce, tomato paste, ketchup, cream and a handful of grated cheddar cheese. Let it boil for about 5-6 minutes.
  7. Mix the sauce and pasta; then, transfer into a medium baking dish.
  8. Top with mozzarella and cheddar cheeses.
  9. Pre-heat oven to 175-200 OC and bake the macaroni for about 30 minutes or until the cheeses melt.
